The Tipsy Truth Comes Out

The truth is, I usually DESPISE sweet potatoes. I find everything about them awful.

I think this comes from when my parents sent me to a really nice day care on 63rd and Pulaski in Chicago called The Learning Circle. The Grandpa who owned it with his family was a chef and he would make us VERY fancy lunches.

I didn’t appreciate his food then as much as I probably would now. He used to make sweet potatoes a lot, probably because they were good for us and he cared, but I would NEVER eat them.

In the 1970s things were different, so I was made to sit at the table until I ate enough of them to be excused to nap. I know now this would be frowned upon, but back then this is how things worked.

Since the potato trauma of the 1970s that I endured, I have stayed away from sweet potatoes. On the other hand, Mister Tipsy LOVES sweet potatoes, so I started making these Air Fried Sweet Potatoes with Magic Butter.

He loves them and I have to say that the few times a year I make these, I really enjoy them! The skin is crispy and flavorful, so many flavors are infused in them and the butter is phenomenal.

This goes to show that even a tater hater can enjoy these!

There Is Not Much To Say

There is not much to this recipe. These potatoes are very easy to cook.

My recipe card below has the directions for the air fryer, but you can also adapt them to your oven. You can make as many or as little as you like.

The recipe as written makes enough butter for about four potatoes. I usually make a double batch of the butter anyway since I like to keep it on hand.

Just make sure you wash and let your potatoes dry before brushing them with butter and baking them,

Buttermilk powder

Hiding In Plain Sight

I know that everyone is going to lose their minds over the buttermilk powder. Truth be told buttermilk powder has been in your baking aisle at your grocery store your whole life.

I use this buttermilk powder to make my Famous French Quarter Dressing and in many other recipes. If for some reason you do not see it in the baking aisle of your store, Amazon has many options.

Soy Sauce and Syrup?

Yes soy sauce, butter, and syrup to brush on the skins of these potatoes before you bake or air fry them. This will infuse a great flavor and give the skins a pretty caramelized color.

You can skip this step if you want to but it makes the skins taste so good. Reminder that if you eat the skins, these potatoes are very “cleansing.”

Jazz It Up With Marshmallows

If you want to make these even more decadent, you can add some mini marshmallows on top of the butter when you finish air frying these for the two minutes.

I like them just with the butter, but once in awhile I will add the marshmallow for Mister Tipsy’s happiness.
